One thing that I thought of when I saw the partially colored mare with a gray coat and yellow eyes... There's a trick I learned from egophiliac about how to fill in flat colors. If you use the magic wand tool, there's an option somewhere squirreled away in selections that lets you "Grow Selection," and you can increase the selection size by a few pixels to be able to fill in colors without having gaps between the color and the outlines (if you do it on a different layer.)
