Personally, I think fewer episodes of something really good make it all the better when something new does come along.

I'm getting the feeling that we'll be seeing some character centric episodes for every character this season. We've had Rainbow Dash, Rarity, Twilight and Pinkie Pie centered episodes so far, and plenty of season left to go.

I personally want to see an episode that is based solely around Applejack and Fluttershy. Now that I think about it, season two has rarely had an episode that is based solely around just two of the mane six.

But yes, I agree. I hope for a Fluttershy episode in the near future.

This. She has been getting a little face time though. I'd be interested to see her put in a different role besides her normal shy self (or dragon stare-master shy) and deepen her character a bit more. I'm sure that episode will come when the time is right. Don't forget Season 3 is in production right now, too, and there's a lot of episodes to go before we get there!
